  • 1 teaspoon ginger, grated
  • 2 eggs (optional), beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooking oil
  • Fresh coriander leaves, chopped for garnish

Instructions:

  1. Cook the Mohit Classic Long Grain Rice according to the package instructions. Once cooked, spread it on a tray to cool down and prevent sticking.
  2. Heat a little oil in a wok or large pan over medium-high heat. Add the beaten eggs and scramble them until cooked. Remove and set aside.
  3. In the same wok, add a bit more oil if needed. Add the minced garlic and grated ginger. Sauté for a minute until fragrant.
  4. Add the chopped mixed vegetables and Mohit Soya Chunks. Stir-fry for a few minutes until the vegetables are slightly tender and the soya chunks are heated through.
  5. Push the vegetables and soya chunks to one side of the wok. Add a little more oil if needed and toss in the chopped spring onions. Sauté for a minute.
  6. Add the cooled cooked rice to the wok. Use a spatula to break up any clumps of rice and mix everything together.
  7. Drizzle soy sauce and oyster sauce (if using) over the rice. Add sesame oil for flavor.
  8. Toss the rice and vegetables together, ensuring that the sauces are evenly distributed. Season with salt and pepper to taste.
  9. Add the scrambled eggs back to the wok and give it a final toss.
  10. Once everything is well mixed and heated through, remove from heat.
  11. Garnish with freshly chopped coriander leaves.
  12. Serve the Veg Fried Rice hot as a delicious and wholesome meal.
