Soyabari Curry

  • 1 cup Mohit Soya Chunks
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, pureed
  • 2-3 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon fenugreek seeds (methi)
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup cooking oil
  • Salt to taste
  • Water, as needed
  • Boil the Mohit Soya Chunks in water according to the package instructions. Drain, rinse with cold water, and squeeze out the excess water. Set aside.
  • In a deep pan or pot, heat the cooking oil over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add fenugreek seeds and sauté briefly.
  • Add the finely chopped onions and sauté until they turn golden brown.
  • Add the ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.
  • Add the tomato puree, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook the masala until the oil starts to separate from it.
  • Add the boiled and drained soya chunks to the masala. Mix well, ensuring the chunks are coated with the masala. Cook for a few minutes to allow the flavors to blend.
  • Add water to achieve your desired curry consistency. Cover and let the curry simmer on low heat for about 15-20 minutes, allowing the flavors to infuse and the soya chunks to absorb the flavors.
  • Stir in the garam masala and chopped fresh coriander leaves. Adjust the seasoning if needed.
  • Simmer for an additional 5 minutes, allowing the curry to thicken and the flavors to meld together.
  • Serve the Soya Chunks Curry hot with steamed rice, roti, naan, or any bread of your choice.
  • You can add vegetables like peas, carrots, and potatoes to the curry for extra nutrition and flavor.
  • Customize the spiciness by adjusting the amount of red chili powder and green chilies.
