Ingredients:

  • 1 cup Mohit Soya Chunks
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, pureed
  • 2-3 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon fenugreek seeds (methi)
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup cooking oil
  • Salt to taste
  • Water, as needed

Instructions:

  1. Boil the Mohit Soya Chunks in water according to the package instructions. Drain, rinse with cold water, and squeeze out the excess water. Set aside.
  2. In a deep pan or pot, heat the cooking oil over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add fenugreek seeds and sauté briefly.
  3. Add the finely chopped onions and sauté until they turn golden brown.
  4. Add the ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.
  5. Add the tomato puree, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook the masala until the oil starts to separate from it.
  6. Add the boiled and drained soya chunks to the masala. Mix well, ensuring the chunks are coated with the masala. Cook for a few minutes to allow the flavors to blend.
  7. Add water to achieve your desired curry consistency. Cover and let the curry simmer on low heat for about 15-20 minutes, allowing the flavors to infuse and the soya chunks to absorb the flavors.
  8. Stir in the garam masala and chopped fresh coriander leaves. Adjust the seasoning if needed.
  9. Simmer for an additional 5 minutes, allowing the curry to thicken and the flavors to meld together.
  10. Serve the Soya Chunks Curry hot with steamed rice, roti, naan, or any bread of your choice.

Tips:

  • You can add vegetables like peas, carrots, and potatoes to the curry for extra nutrition and flavor.
  • Customize the spiciness by adjusting the amount of red chili powder and green chilies.
