Ingredients:
- 1 cup Mohit Soya Chunks
- 2 medium onions, finely chopped
- 2 medium tomatoes, pureed
- 2-3 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon cumin powder
- 1/2 teaspoon fenugreek seeds (methi)
- 1/4 cup fresh coriander leaves, chopped
- 1/4 cup cooking oil
- Salt to taste
- Water, as needed
Instructions:
- Boil the Mohit Soya Chunks in water according to the package instructions. Drain, rinse with cold water, and squeeze out the excess water. Set aside.
- In a deep pan or pot, heat the cooking oil over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add fenugreek seeds and sauté briefly.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for a couple of minutes until the raw smell disappears.
- Add the tomato puree, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook the masala until the oil starts to separate from it.
- Add the boiled and drained soya chunks to the masala. Mix well, ensuring the chunks are coated with the masala. Cook for a few minutes to allow the flavors to blend.
- Add water to achieve your desired curry consistency. Cover and let the curry simmer on low heat for about 15-20 minutes, allowing the flavors to infuse and the soya chunks to absorb the flavors.
- Stir in the garam masala and chopped fresh coriander leaves. Adjust the seasoning if needed.
- Simmer for an additional 5 minutes, allowing the curry to thicken and the flavors to meld together.
