Raw Mango Rice

Ingredients:

  • 1 cup Mohit Classic Long Grain Rice
  • 1 raw mango, peeled and grated
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon ginger, grated
  • Few curry leaves
  • 2-3 dried red chilies, broken into pieces
  • 1/4 cup peanuts, roasted and coarsely ground
  • Salt to taste
  • Fresh coriander leaves, chopped for garnish

Instructions:

  1. Cook the Mohit Classic Long Grain Rice according to the package instructions. Once cooked, spread it on a tray to cool down.
  2. Heat oil in a pan over medium heat. Add the mustard seeds and let them splutter.
  3. Add the cumin seeds, asafoetida, dried red chilies, and curry leaves. Sauté for a minute until fragrant.
  4. Add the grated ginger and sauté for another minute.
  5. Add the grated raw mango and sauté for 2-3 minutes until it softens slightly.
  6. Add turmeric powder, red chili powder, and salt. Mix well and cook for a minute.
  7. Add the roasted and ground peanuts to the mixture. Mix to combine.
  8. Add the cooked Mohit Classic Long Grain Rice to the pan. Gently mix everything together, ensuring that the mango mixture is evenly distributed.
  9. Cook the rice mixture on low heat for another 2-3 minutes, allowing the flavors to meld.
  10. Remove from heat and let the Raw Mango Rice cool down slightly.
  11. Garnish with chopped fresh coriander leaves.
  12. Serve the Raw Mango Rice as a tangy and flavorful dish.

Tips:

  • Adjust the quantity of raw mango and red chili powder according to your taste preference.
  • You can add roasted cashews or roasted coconut pieces for added texture and flavor.
