INGREDIENTS

  • 2 cups of Mohit Premium Long Grain Rice cooked and cooled.
  • 1 cup cooked chicken breast, diced.
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers), finely chopped.
  • 3 eggs, beaten.
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced.
  • 2 tablespoons soy sauce
  • 1 teaspoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste.
  • Green onions, chopped for garnish.

INSTRUCTIONS

  1. Prepare the Ingredients:
    • Cook the Mohit Premium Long Grain Rice according to the package instructions. Allow it to cool completely and fluff it with a fork to prevent clumping.
    • Cook the chicken breast, either by grilling, boiling, or sautéing. Dice it into small pieces.
    • Finely chop the mixed vegetables and mince the garlic.
    • Beat the eggs in a bowl and set aside.
  2. Stir-Fry Chicken and Vegetables:
    • Heat a large pan or wok over medium-high heat and add 1 tablespoon of vegetable oil.
    • Add the diced chicken and sauté until it’s cooked through and slightly browned. Remove from the pan and set aside.
    • In the same pan, add another tablespoon of oil. Add the minced garlic and sauté for about 30 seconds until fragrant.
    • Add the mixed vegetables and stir-fry for a few minutes until they are slightly tender. Remove from the pan and set aside.
  3. Scramble the Eggs:
    • Push the vegetables to one side of the pan and add the remaining tablespoon of oil to the empty space.
    • Pour the beaten eggs into the oil and scramble them using a spatula until they are fully cooked.
  4. Combine Ingredients:
    • Push the scrambled eggs to the side of the pan and add the cooled cooked rice to the other side.
    • Pour the soy sauce and oyster sauce over the rice. Use a spatula to mix the sauces with the rice and eggs, distributing them evenly.
    • Add the cooked chicken and sautéed vegetables back into the pan.
  5. Flavor and Finish:
    • Drizzle the sesame oil over the rice mixture and toss everything together.
    • Season with salt and pepper according to your taste preference.
    • Continue to stir-fry the rice mixture for a few minutes, ensuring that everything is well combined and heated through.
  6. Serve:
    • Once the fried rice is hot and well mixed, remove the pan from the heat.
    • Garnish with chopped green onions for added freshness and color.
  7. Enjoy:
    • Serve the Chicken Fried Rice hot as a flavorful and satisfying meal on its own or as a side dish.

TIP: Feel free to customize the recipe by adding other ingredients like shrimp, tofu, or different vegetables. You can also adjust the seasoning to suit your taste.
