Soya Masala

  • 1 cup Mohit Soya Chunks, soaked and drained
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1/2 teaspoon cumin seeds
  • 1 bay leaf
  • 2-3 green cardamom pods
  • 4-5 cloves
  • 1-inch cinnamon stick
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • 1/2 cup plain yogurt, beaten
  • 1/4 cup fresh cream (optional)
  • Salt to taste
  • 3 tablespoons cooking oil or ghee
  • Fresh coriander leaves, chopped for garnish
  • Heat oil or ghee in a large pan or kadai over medium heat. Add cumin seeds, bay leaf, green cardamom pods, cloves, and cinnamon stick. Sauté for a minute until aromatic.
  • Add the finely chopped onions and sauté until they turn golden brown.
  • Stir in the ginger paste and garlic paste. Sauté for another minute until the raw smell disappears.
  • Add the tomato puree and cook until the oil starts to separate from the masala.
  • Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a few minutes.
  • Add the soaked and drained Mohit Soya Chunks to the masala. Mix gently to coat the soya chunks with the masala.
  • Reduce the heat to low and add the beaten yogurt. Mix well to incorporate the yogurt into the masala. Cook for a few minutes until the masala is well combined.
  • If using fresh cream, add it at this stage and stir to combine.
  • Add water to achieve the desired gravy consistency. Cover the pan and let the curry simmer for about 10-15 minutes, allowing the flavors to meld and the soya chunks to absorb the flavors.
  • Sprinkle garam masala powder and chopped fresh coriander leaves. Mix well.
  • Taste and adjust the seasoning if needed.
  • Remove from heat and serve the Soya Chunks Masala Curry hot with steamed rice, naan, roti, or paratha.
  • You can add other vegetables like peas, carrots, or bell peppers to the curry for extra flavor and nutrition.
  • Adjust the spiciness according to your preference by varying the amount of red chili powder.
  • For a creamier texture, you can use more fresh cream or substitute with coconut milk.
